My skills cover food science, technological innovation and problem solving and I act as an entrepreneur and as an academic.
As a consultant, I've been developing activities in food protection and related subjects, namely in developing training activities. I also assess the feasibility of innovations related to biotech and food thus providing a contribution to the circular Bioeconomy.
My current research interests relate to sustainable food systems and circular bioeconomy, namely based in the Mediterranean Diet principles; At the molecular level, I am interested in knowing more about bioactive molecules such as plant polyphenols and microbial metabolites from fermented foods. I am also interested in assessing health and environmental performance of innovative foods;
